Chickpea flour is called gram in Hindi and has a beautiful pale-yellow colour with a nutty note. The flour provides a pleasant and long-lasting feeling of fullness. Use the flour when baking bread, in small pancakes and pancakes (preferably savoury versions whisked together using chickpea flour, water, a little sea salt and spices such as turmeric and dried herbs, then fried in a pan until golden and crisp and served warm with curries or soup). It is also suitable for pastries, wholesome sweet treats and as a base for falafel.
