Chickpea flour is a fine-grained, naturally gluten-free flour made entirely from chickpeas. Chickpea flour is a common ingredient in Indian cuisine and is called ‘gram’ in Hindi. The flour has a beautiful pale-yellow colour with a nutty note.
Use the flour when baking bread, in small pancakes and pancakes (preferably savoury versions whisked together from chickpea flour, water, a little sea salt and spices such as turmeric and dried herbs, then fried until golden and crisp and served warm with curries or soup). It is also suitable for pastries, wholesome sweet treats, as a base for falafel and as a binding ingredient in vegetable patties and root-vegetable balls.
